I am so impressed with how the ducks are handling the winter weather, as we are still getting eggs! They must know they have fans out there. If you need some duck egg information or inspiration for their uses in the kitchen, I’ll refer you to Carol Deppe, who inspired many young farmers to give ducks a try. My eggs receive minimal fanfare: out of the cast iron and onto buttered toast, but newcomers might find it best to cook them into something familiar to get a feel for the taste and texture differences. There aren’t many, but I respect that some folks have very sensitive taste buds, and might be inclined to swear off duck eggs all together if the taste is exceptionally strong on it’s own.
